We are a microbrewery from Mexico City (CDMX) renowned for our Cervezas Híbridas that reflect the great bio-cultural diversity of the Mexican terroir through the use of ingredients typical of our culinary and herbalist culture.

our philosophy

All our ingredients are locally sourced from farmers who do not utilize any agrochemicals during the cultivation process. In addition, we strive to seek out farmers who employ regenerative practices.
We are convinced that the key to preserving our ecosystems, culture, and ancestral knowledge requires the empowerment and support of these farmers.

what is a “cerveza híbrida”?

A cerveza híbrida is a beer that obtains its alcohol content from the fermentation of combinations of cereals, fruits, honeys or plants.

why make “cervezas híbridas"?

In Mexico, almost all craft beer is produced with imported ingredients (malt and hops), following the German Purity Laws that, since the 16th century, dictate the world trend regarding beer production. This is how our journey began, with the deep desire to support our national producers who benefit little or nothing from the enormous beer market that is developing.

the axolotl’s garden

Our pilot plant is located in a rural area of ​​Mexico City that we call “El Jardín del Axolote.” There we use rainwater throughout the production process, which is aimed at conserving the environment and promoting the development of the local economy.
